Roasted Lamb Rib Glazed with Honey and Chilli Flakes

Serves: 4 people
Main Ingredient
Half a kilogram of lamb ribs
Braising Stock Ingredients
1 litre of water
Half a cup of diced carrots
Half a cup of diced celery
Quarter of a cup of sliced tomatoes
3 1/2 tablespoons of tomato paste
3 1/2 tablespoons of sliced shallots
1 1/2 tablespoons of sliced garlic
2 tablespoons of liquid smoke
1/2 a tablespoon of white peppercorns
2 sprigs of thyme
1 sprig of rosemary
Salt and sugar to taste
Glazing Ingredients
3 1/2 tablespoons of honey
3 1/2 tablespoons of corn oil
1 tablespoon of chilli flakes
2/3 of a tablespoon of paprika powder
How To Cook The Dish
Preheat the oven to 160°C.
Place main braising stock ingredients into a baking container.
Place the lamb ribs into the braising stock, making sure the stock completely covers the ribs.
Cover the container with two layers of aluminium foil and place in the oven for one hour at 160°C.
Add the glazing ingredients into a pot and boil for five minutes.
Remove the lamb ribs from the oven and glaze them.
Plate and serve hot.
